This is a real easy one that’s nice for summer time.
Here’s what you’ll need:
– 1 cup quinoa
– 1-2 cups of cherry tomatoes
– 1 red onion
– 1 lemon
– 1 bunch of cilantro
– 1 package of seitan
First you prepare your quinoa how it instructs you to on the package, they differ depending on what kind you use, I used a plain white quinoa. After it is cooked you set it aside and let it cool.
You then cook some seitan in a pan with some olive oil. I buy it packaged (westsoy cubed), but if you make your own, more power to you!
While you are cooking your quinoa, or browning your seitan you can cut up your veggies. You must first wash all your veggies! The cherry tomatoes get cut in half, dice onion into small pieces, and tear leafs off of the cilantro. You give a rough chop to the leaves, then mince (cut very, very tiny) about 1-2 tablespoons of cilantro stems.
After the quinoa is cooled, and the seitan is still warm, you throw it all together and squeeze some fresh lemon juice on top. Add as much or as little of the ingredients, for instance, I love onions so I might use a half or whole onion. I also love cilantro so I’d go with 2 tablespoons of the stems with the leaves, the stems have so much flavor! Also, remember that you can always add more, but it’s hard to take it out after its already in. Season with salt and pepper to taste, and enjoy!
